Tasty Tuesday: Rolo Cheesecake Bars


If you love chocolate and caramel, then you are going to love today's Tasty Tuesday post. I came across this recipe for Rolo Cheesecake Bars on Pinterest via Closet Cooking. The recipe calls for making these as bars. Of course I had to get all fancy and deviate from that and make them as individual tarts instead. Let's just say I will definitely make them as bars the next time. Making the tarts was time consuming, messy and hard to portion (but the end result was oh-so-tasty). Oh well, lesson learned...

Are you ready for some ooey gooey goodness? Let's get to the recipe (with my minor modifications), shall we?

Makes 12+ servings

Crust:
1 1/2 c. graham cracker crumbs

  • 1/4 c. sugar

  • 6 T. butter, melted


    Cheesecake:
    • 8 oz. package cream cheese, at room temperature
    • 1/3 c. bottled caramel sauce
    • 1/3 c. sugar
    • 1 egg
    • 1 1/2 t. vanilla extract
    • 1 1/2 c. mini Rolos

    Ganache:
    • 8 ounces dark chocolate
    • 2 T. butter

    • Directions

    Make the crust:

    1. Mix the graham cracker crumbs, sugar and butter. Press into the bottom of a greased 8" square baking pan.
    2. Bake in a preheated 350° F oven until lightly golden brown, about 8-10 minutes. Set aside.



    Make the cheesecake:

    1. Cream the cream cheese. Mix in the caramel sauce followed by the sugar, egg, vanilla and finally the mini Rolos. Pour the mixture into the prepared baking pan.
    2. Bake in a 350° F oven until the cheesecake is set, about 25-30 minutes. Set aside to cool.


    Make the ganache:

    1. Melt the chocolate and butter in a double boiler, mixing until smooth. Pour over the cheesecake. Refrigerate.


Another look at the delicious finished product. Enjoy!

  5. These look a bit sickly for me, I don't usually like chocolate or caramel cheesecake. My hubby would love them though so maybe I'll make them for a father's day treat for him! x

  16. These look really good! (and no peanut butter...yay!) Seeing as how my husband just bough 6lbs of cream cheese at Costco instead of three block....ummm these are being pinned and I hope to make them soon. I've got enough cream cheese! ;-)
